Classic Italian Christmas Cookies
I found this recipe two years ago through a blogger but it’s posted on Swerve’s website. They were easy and delicious. I got them down this year, last time I made them the “icing” was a fail, it was runny and soaked right into the cookie. You can see that here on my other Christmas Cookies Post.
Keto Chocolate Chip Cookies
Ingredients
1 1/2 cups Almond Flour
1/4 Cup Coconut Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
1 Cup Butter (softened)
1/3 Cup Swerve Granular Sugar
1/3 Cup Swerve Brown Sugar
2 teaspoons Vanilla Extract
2 Eggs
1 Cup Sugar Free Chocolate Chips
Directions
- Heat oven to 375
- Stir almond flour, coconut flour, baking soda, and salt together. Beat butter, swerves sweeteners, and vanilla in large bowl until creamy. Then add eggs. Gradually add dry mixture until mixed well. Fold in chocolate chips. Drop a tablespoon size on parchment paper covered baking sheet.
- Bake 7-9 minutes or until edges are lightly browned. Cool for about a minute on baking sheet then move them to a cookie rack.
