Banana Bread Muffins

I had 2 very ripe bananas and what better way to use them than to make banana bread muffins. They’re easy, you can take them to-go and they’re a good breakfast. Plus There’s no added sugar!

Recipe

2 Ripe Bananas
2 Large Eggs
1 tsp Vanilla
1 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp Salt
1/4 tsp Nutmeg
2 Cups Almond Flour
1/8 Cup Lily’s Dark Chocolate Chips

Preheat oven to 350. Spray silicone muffin pan with coconut oil spray and set aside. Mix all ingredients except almond flour and chocolate chips until smooth. Add in almond flour and mix well. Evenly distribute batter into silicone muffin tray and top each one with a couple dark chocolate chips. Bake for 20-25 minutes and check with a toothpick.

Jeff loved them so much he pretty much ate the whole batch. So I decided I needed to make them again soon. When Jeff went grocery shopping last, I asked him to get riper bananas to do so. Hope you enjoy them as much as Jeff did!
